La Catedral de Navarra started as a small jar sealing business dating back to the Spanish Civil War when soldiers’ families would preserve foods for their sons and daughters. Since then their aim has been to obtain the best vegetables and preserve their flavour intact.

The Protected Designation of Origin (PDO) was created in 1987 and includes eight municipalities: Lodosa, Mendavia, Andosilla, Azagra, Carcar, Lerin, San Adrian and Sartaguda. It protects and controls the cultivation and production of the “piquillo” variety of peppers, autochthonous of Navarra, in these locations under strict quality controls.
A deep red, fleshy, compact, consistent pepper with a turgid texture without being hard. It assures the highest-quality piquillo, with a spicysweet flavor with a fire roasted aftertaste, suitable for numerous tapas.
Their high quality and particular flavour distinguish them from other peppers and they boast international recognition.
